Rouille ~ A sauce that is often served as a garnish with food, most notably bouillabaisse and is most often used in the cultural Provence cuisine. Its best served on croutons in fish soups and chowders, with white fish, and on crackers.

Eggplant Caviar Spread ~ Made with local black olives into this perfect combination; sweet and just a little salty, its best served on toast or crackers, or with raw vegetables as an amazingly easy but tasty appetizer.

Anchovy Creme Spread ~ Made with Mediterranean anchovies, olive oil, spices and lemon; best served on toast, served with smoked fish, or in sauces and vinaigrettes.

Artichoke Spread ~ made with local French artichokes, olive oil, and anchovy paste, for that savory and hint of salt delight from a genuinely delicious Provencal spread. Its best served on toast, with cheese and raw vegetables. This is an elegant and easy appetizer or dip staple for any hors d’oeuvre table.

Red Bell Pepper Spread ~ made with local sweet red peppers with tomatoes, onions and spices, all prepared in the right combination of delicious for this provencal spread. Its best served on crackers as an appetizer or as a base for soups and sauces chicken and shellfish.

Cured Tomato Spread ~ Made using fresh local dried tomatoes, garlic and olive oil. Its best served on toast, added to sauces and vinaigrettes, or as a side to white fish and chicken.
